Jackfruit Seed Sambhar

Ingredients :

  • 1 cup jackfruit seed
  • 1 brinjal
  • 2 tbsp sambhar powder( alternately you can freshly roast the dals and grind with coconut and use the paste- I have shared the sambhar recipe before)
  • 1 lemon sized tamarind soaked and juice removed
  • 1/2 cup boiled tur dal
  • Curry Leaves
  • Mustard seeds
  • 1 tsp ghee
  • Salt to taste

How to make:

1. The jackfruit seed once removed from the fruit will have a white covering. Leave this to air dry doe 2-3 days so the outer xo Wei g can be removed easily. The. U can see the brown seed inside that is ready to cook
2. Lightly mash each seed to break it little so there’s a crack. This will help the seed cook faster
3. Cover the seed with water ( no salt) pressure cook for 4 whistles
4. In a pan add the tamarind water the cut brinjal and the cooked jackfruit seed , salt along with the sambhar powder and boil till the brinjals are cooked sand the raw smell of the powder goes.
5. Add the cooked and mashed tur dal and adjust consistency.add curry leaves
6. Temper the mustard seeds in ghee and add to the sambhar
7. Yummy Sambhar ready
