Cucumber chutney goes very well with any dosa or idly. The taste has to be had to be believed
Ingredients :
- 1 cucumber
- 3 tbsp chana dal / peanuts
- 3-4 green chilly
- 1/4 cup fresh grated coconut
- Small piece of tamarind
- 3 tbsp fresh coriander leaves
- Salt to taste
- For tempering
- 1 tsp oil
- 1 tsp mustard seeds
How to make:
- In a pan take a tsp oil and roast the chana dal / peanut. Once almost done add the green chilly, tamarind , coriander leaves.
- Cook for 2 mins then add fresh coconut and salt.
- Remove off the flame and cool completely
- Chop the cucumber ( since I use organic I used the skin as well if not peel)
- First dry grind the roasted ingredients into a coarse powder. Then add the cut cucumber and grind. Add little water only if required as the cucumber has high water content.
- Remove on to a serving bowl and temper with mustard seeds.
