Little Millet Idli

 This is a gluten free recipe made from Little millet or samai as it is also known. 

 

Ingredients :

  • 3  cups little millet
  • 1  cup urad dal
  • 3/4  cup poha
  • 1 tbsp methi seeds

How to make:

  1. Soak the millet separately for about 6/7 hours
  2. Soak the urad dal and methi separately
  3. Soak the poha 1/2 hour before grinding
  4. After the soaking time discard water 
  5. First, grind the urad dal and methi seeds into a fluffy batter with less water .This is the key to a soft idli. Pour into a container
  6. Grind the little millet with the soaked poha into a smooth batter
  7. Add to the urad dal paste and mix well.
  8. Add salt and ferment overnight or 8-10 hours
  9. Make soft idlis and serve with Sambar and chutney of your choice
