Red rice is rich in iron and vitamin so using it in your cooking is a good idea and oats is high in fiber so makes a good healthy combination for pancakes.
Ingredients :
- 2 cups red rice flour ( you could use normal rice flour) .
- 1 cup oats flour ( you could just powder oats in a mixer to a smooth flour )
- 1/2 to 3/4 cup jaggery powder
- 1 tsp vanilla essence
- 1 tbsp cacao powder ( avoid using cocoa powder as it’s highly processed)
- 1 boiled and mashed sweet potato ( I avoid cooking fruits and hence haven’t used bananas. But it’s optional . You could avoid the sweet potato if you are ok with using baking soda. I personally avoid soda wherever I can. The sweet potato gives the softness to the pancake)
- Water approx 1 cup
- 3-4 tsp choco chips
How to make:
- Mix the oats, rice flour, cacao powder, Jagger powder, choco chips and mix well.
- To this add the vanilla essence, mashed sweet potato and water and mix well to make a lump free and dropping consistency batter.
- Rest for 10 minutes
- Heat a pan and make the pancakes.
- Serve with chocolate sauce or honey
