Gluten-free Idli. This is very simple idli that does not require fermenting. This is usually made with idli Rava. However, I have used jowar Rava or sorghum here. There is no soda used for softness. The cucumber is the hero of this recipe which gives you soft delicious idli for this quick morning breakfast.
Ingredients :
- 2 cups grated cucumber ( if tender grate with the seed if not remove seed and grate)
- 1 cup jowar rava ( or idli rava or any other rava you wish to substitute)
- 1 cup grated coconut
- 2-3 green chilly
- 2-3 tbsp water
- Salt to taste
How to make:
1. Peel and grate the cucumber.
2. Add the rava to this and keep aside.
3. Grind the coconut and green chilly without water.
4. In the same mixer jar add the cucumber and rava mixture and give a blitz with 2 tbsp water just to combine all together.
5. Do not add more water than this as the cucumber is a water logged vegetable and will release its juices once we add salt.
6. The consistency will be thick dropping.
7. Add salt and mix.
8. Grease the idli plate and add dollops of this batter and shape them up.
9. Steam as regular idlis.
10. Serve hot with chutney of your choice.
11. Delicious cucumber idli is ready to be served
