I had some murmura which had gone soft so I decided to
turn it into a dosa. The result surprised me as not only did dosas come out
beautifully but also there is an inherent tinge of sweetness which makes the
Dosa so yummy.
Ingredients :
- 4 cups murmura/puffed rice
- 1 cup rice/ millet of your choice
- 1/2 cup urad dal
How to make:
- Soak all of the above separately in different containers in water for about 3 to 4 hours.
- Drain all water from rice/millet and grind. Pour into a container
- Next, Squeeze the water out of the murmura and add to this. Give it a grind. Add water only as and when required as the murmura will have soaked quite some water when it is put in water. Once you get a smooth and pourable consistency remove and pour into the container with the rice batter.
- Drain water from urad dal and give it a grind with little water. Once you get smooth consistency add to the rice batter.
- Mix all the batters well, add water to make dosa consistency, add salt and ferment overnight or 8-10 hours.
- Dosa/ uttapam batter is ready. This batter makes soft fluffy dosas .
- You can make simple dosa which will be extremely soft and fluffy or give it your desired toppings to make it a wholesome uttapam. Serve hot with a chutney of your choice.
