Ingredients :
- ½ kg Arbi ( boiled to one whilstle only in cooker . Do not over cook. You can even cook in open pan and peel)
- 3 Tbsp urad dal
- 1 tbsp rice (I used brown rice you could use any)
- ¾ tbsp black whole pepper
- 2 or 3 dry red chilly
- 1 tbsp jaggery
- ½ tsp turmeric
- 3 tbsp fresh grated coconut
- 1 small lemon size tamarind
- 1 tsp oil
- For tempering
- 1 tsp ghee
- 1 tsp mustard seeds
- Few sprigs of curry leaves
How to make:
- Wash the arbi well and put in a cooker for one whistle with little water. Once cooled, peel and cut into ½ inch size roundels.
- In a pan take a tsp of oil. Roast the urad dal, rice, black pepper, red chili and tamarind till they become light brown. Once cool add coconut and some water and grind into a smooth paste( picture attached).
- In a kadai add the cut arbi, 1 to 2 glasses of water(depending on the consistency it should be runny like sambhar), the paste, salt, jaggery, turmeric( always use turmeric when using black pepper for better absorption ) and curry leaves. Let it boil well for 5/6 minutes. Temper it with ghee,mustard seeds and curry leaves. Delicious kootu is ready
