To this dish so much when I was a child and don’t forget the inherent sweetness and the curd. Sharing my moms childhood beet root raita recipe.
Ingredients :
- 2-3 small or I big beet root
- 2 cups home made dahi/yogurt
- 2 green chilly
- 1 tbsp chopped coriander leaves
- 1 tsp mustard seeds
- 1-2 tsp oil ( I used cold press ground oil)
- 2 tsp urad dal ( white lentil)
- Salt
How to make:
1. Peel and grate the beet root on the medium teeth on the grater.
2. In a pan add the oil and mustard seeds. Once they crackle add the urad dal. Urad dal can be skipped but I love the crunch that it adds to the raita hence I add more.
3. Once the urad dal browns slightly add the grated beet, green chilly and salt . Cover and cook till soft. Cool completely
4. Beat the curd to remove lumps add the cooled beet . Check salt and garnish with coriander.
5. Yummy beet raita is ready to be served.
