Dill leaves Lemon Rice

I have already shared the traditional lemon rice recipe. This has a unique flavour of dill leaves which is made often in Karnataka.

A recipe that will be loved if you like the dill leaves flavour. Pairing dill leaves with lemon gives the iron the dash of vitamin C that’s required for good absorption by the body.

My way of making the simple lemon rice highly nutritious. Can be made with millets as well instead of rice.

Ingredients :

  • 2 cups cooked and cooled rice/ millet
  • 1 cup finely chopped dill leaves
  • 2 tsp oil
  • 1 tsp mustard seeds
  • 1 tsp channa dal
  • 1 tsp urad dal
  • 2 tbsp groundnut
  • 3-4 green chilly
  • 1 tsp turmeric powder
  • Few curry leaves
  • Juice of 1 lemon

How to make:

  1. Add oil in a pan. Add mustard seeds, channa dal, urad dal, groundnut. Let the groundnut brown then add the green chilly, curry leaves.
  2. Add the dill leaves, salt and turmeric and cook till the dill leaves are fully cooked.
  3. Switch off the flame and add the cooled rice/millet and lemon juice. Mix lightly so an not to mush up the rice/ millets .Check for salt.
