Ingredients :
- 1 cup cooked and cooled rice
- 1/2 cup grated raw mango( de-skin before grating)
- To grind into powder
- 1/2 cup fresh grated coconut
- 3- 4 dry red chilly ( add depending on the type of red chilly you are using mine isn’t very spicy)
- 1 tsp mustard seeds
- 1 tsp turmeric
- For tempering
- 2 tbsp groundnut
- 2 tbsp oil
- 1 tsp mustard seeds
- Sprigs of curry leaves
- 2 green chilly
How to make:
- Cook and cool the rice completely
- In a grinder add the coconut, red chilly, turmeric and mustard seeds and grind into a powder without water.
- In a pan add the oil and let mustard seeds splutter. Then add the grated mango, curry leaves and green chilly and fry till the rawness of the mango goes.
- Then add the group s paste time this ans fry again for 2-3 minutes.
- Add the cooled rice and salt and mix well so the mango masala mixes well with every morsel of rice. Be gentle though while mixing.
- Serve this yummy mango rice with a side of raita or as is.
