Raw Mango Rice

Ingredients :

  • 1 cup cooked and cooled rice
  • 1/2 cup grated raw mango( de-skin before grating)
  • To grind into powder
  • 1/2 cup fresh grated coconut
  • 3- 4 dry red chilly ( add depending on the type of red chilly you are using mine isn’t very spicy)
  • 1 tsp mustard seeds
  • 1 tsp turmeric
  • For tempering
  • 2 tbsp groundnut
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • Sprigs of curry leaves
  • 2 green chilly

 

How to make:

  1. Cook and cool the rice completely
  2. In a grinder add the coconut, red chilly, turmeric and mustard seeds and grind into a powder without water.
  3. In a pan add the oil and let mustard seeds splutter. Then add the grated mango, curry leaves and green chilly and fry till the rawness of the mango goes.
  4. Then add the group s paste time this ans fry again for 2-3 minutes.
  5. Add the cooled rice and salt and mix well so the mango masala mixes well with every morsel of rice. Be gentle though while mixing.
  6. Serve this yummy mango rice with a side of raita or as is.
