High in vitamin A and a winter vegetable the red pumpkin is a very versatile veggie to use . if paired with the right spices we can extract the health benefits to make some delicious recipes in our kitchen
Sharing a chutney recipe that can be has with either rice or dosa and idli or tori and bhakri.
Ingredients :
- 1.5 cup finely sliced pumpkin
- 2 tbsp chana dal
- 1 tbsp urad dal
- 5/6 dry red chilly
- 1 piece tamarind
- 1/2 tsp jaggery
- Oil
- Salt
How to make:
1. In a pan add oil and
roast the dals and red chilly. Once they turn light brown remove it from the
pan and cool
2. In the same pan add
the pumpkin and tamarind and cook till tender
3. Cool this as well
4. In a grinder jar
first add the pumpkin and grind coarsely
5. To this add the dals
, chilly, tamarind, jaggery and salt and grind with 1-2 tbsp water to a coarse
chutney
6. Do not grind this
chutney to a smooth consistency as this will alter the taste.
7. The chutney is ready
8. Serve with idli,
dosa, rice , Roti or bhakri
