White Pumpkin Chutney

Ingredients :

  • 1 cup peeled, de-seeded and grated white pumpkin
  • 2 tbsp chana dal
  • 2 tbsp urad dal
  • 3 dry red chilly
  • A piece of tamarind
  • A small piece of ginger
  • Salt to taste

How to make:

  1. Peel , de seed, and grate the white pumpkin with the biggest side of your grater .
  2. In a pan add 1-2 tsp of oil. Add the dals and chilly and roast till light brown,
  3. Now add in the grated pumpkin, ginger and tamarind and roast for a good 5 minutes on medium flame till the pumpkin is cooked.
  4. Remove from flame and cool completely
  5. Add salt and grind with a tbsp of water if required. Be careful with the water as pumpkin is a water logged veggie.
  6. Give a seasoning of mustard seeds .
  7. Yummy pumpkin chutney is ready to be served with dosa, Idli or bhakri.
